Recipe: Roasted Red Pepper Spread on Bagels

Perfect for lunch or an appetizer

This isn’t going to be a very filling meal option, but I found it great with fries and a salad for lunch. I could also see this easily transitioning to an appetizer spread. Thanks to My Recipes for the inspiration!

Roasted Red Pepper Spread on Bagels – approx. $1.23 per serving

Ingredients

8 ounces cream cheese, softened

1/4 cup minced green onions

2 garlic cloves, minced

Bagels, halved and toasted

1 (12-ounce) bottle roasted red bell peppers, rinsed, drained, and chopped

Directions

  1. Combine first 3 ingredients.
  2. Spread cream cheese mixture evenly over cut sides of bagels. Arrange the chopped red bell peppers evenly over bottom halves of bagels; top with top halves of bagels. Cut each sandwich in half. (I also actually just added in my peppers to the mix and combined it all together – equally yummy in my opinion!)
