Recipe: Zucchini Grinders

A really filling veggie sandwich!

This recipe was such a crowd pleaser and I found it on All Recipes. I totally cheated and just used a pre-made marinara sauce, but it was delicious! And I loved that I could quickly throw it together in a matter of moments. Ryan loved it and I felt like I was really biting into something filling (which as you know can be rare for vegetarian sandwiches).

Zucchini Grinders – approx. $0.75 per serving


1 tablespoon butter

2 medium zucchini, diced

Sea salt, to taste

Marinara sauce, to taste (we used about 2 tablespoons per sandwich)

1.5 cups fresh, shredded Mozzarella cheese

4 (6 inch) rolls, split in half


  1. Preheat the oven to 350 degrees F.
  2. Melt butter in a skillet over medium heat. Cook the zucchini in butter until browned and slightly tender. Season with sea salt.
  3. Spoon a generous amount of the zucchini mixture into each sandwich roll. Cover zucchini with about 1/4 cup marinara sauce per roll. Top with a handful of shredded mozzarella. Place on baking sheet, cheese up.
  4. Bake for 15 minutes in the preheated oven, until bread is heated through, rolls are soft, and cheese is melted.
