Recipe: Spicy green chili

Well another soup is on the menu this week. This came from my latest Penzey’s catalog and the flavor is delightful!! Ryan and I both agreed that once the weather cools down again, we’ll have to repeat this yummy meal. Thanks to Penzey’s for the continued inspiration!

Spicy green chili - approx. $2.00 per serving

3 tblsp olive oil
1 pound ground turkey
1/4 yellow onion, diced
Garlic, 2 cloves
1 poblano pepper, diced
1 green bell pepper, diced
1 tblsp cumin
2 tsp oregano, dried
4 oz diced green chiles
16 oz green salsa
32 oz chicken stock
1 cup water
Sea salt, to taste
Two 15 oz cans white beans, I used pinto
Cilantro or cheese or sour cream for topping

Heat olive oil in large pot. Add turkey and brown until no longer pink. Add peppers, garlic, and onion. Continue cooking until onions look a bit transparent. Add herbs, salt, stock, water, chiles, salsa, and beans. Simmer for about 45 minutes, covered. Enjoy!
